multiple voltage from a battery, can I simply typing in other places?

I have things in my circuit who needs about 11V and others who need around 7v. Could I make a 12v battery and then just touch the point of at least 7.2v and 12v. For example, with 10 batteries in series would be 1.2v 12v from first to last but if I also have a wire coming from the point after 6 7.2V cells. These NiMH rechargeable cells would be if I did that they would become off balance and not load right? As would be the first exit 6 of more than six seconds and then when I get paid every 10, it would spoil the six?

You've answered your question. Yes, the bottom of the cells may discharge completely (and possibly reverse charge), which is disastrous for the farm.
